1. Combine dry ingredients (flour, sugar, baking powder, baking soda, salt) in a bowl and whisk until combined.
2. In a separate bowl, whisk together wet ingredients (buttermilk, egg, melted butter, vanilla extract).
3. Gradually add wet ingredients to dry ingredients, mixing until just combined. Do not overmix.
4. Let batter rest for 5 minutes.
5. Heat a lightly oiled griddle or skillet over medium heat.
6. Pour ¼ cup of batter onto the hot griddle for each pancake.
7. Cook for 2-3 minutes per side, or until golden brown and cooked through.
8. Flip when bubbles form on top and edges look set.

Notes
