1 pound large shrimp, peeled and deveined
1 cup stone-ground grits (not instant)
4 cups chicken broth
1 cup milk
1/2 cup shredded cheddar cheese
1/4 cup butter
1/4 cup all-purpose flour
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 cloves garlic, minced
1 teaspoon Cajun seasoning
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
Chopped green onions for garnish


Instructions

5. Preparation Instructions:
1. Bring chicken broth and milk to a boil in a large saucepan. Slowly whisk in grits and reduce heat to low. Cook for 20-25 minutes, or until grits are tender and creamy, stirring occasionally. Stir in cheddar cheese, salt, and pepper.
2. While grits are cooking, melt butter in a separate large skillet over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
3. Sprinkle flour over the vegetables and cook for 1 minute, stirring constantly. Gradually whisk in 1 cup of the hot cooking liquid from the grits until smooth. Bring to a simmer and cook for 2 minutes, or until thickened.
4. Stir in Cajun seasoning and cayenne pepper (if using). Add shrimp and cook until pink and cooked through, about 3-5 minutes.
5. Serve shrimp and sauce over grits, garnished with chopped green onions.


Notes

For a milder flavor, reduce or omit the cayenne pepper. You can also add other vegetables to the sauce, such as chopped celery or mushrooms. Serve with a side of crusty bread for dipping in the sauce.
