For the Filling

  • 8 ounces cream cheese, softened (let it sit out at room temperature for a bit)
  • ½ cup powdered sugar
  • ½ cup unsweetened cocoa powder
  • 1 cup heavy cream, cold
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh raspberries

Tips for the Filling:

Cream Cheese: Make sure your cream cheese is softened for a smooth and creamy filling.

Dairy-Free: For a dairy-free option, try using vegan cream cheese and coconut cream instead of heavy cream. The texture might be slightly different, but it will still be delicious!

Making the No-Bake Chocolate Raspberry Tart Crust

Let’s start with the crust! This part is easy and fun, especially if you get to crush the cookies.

Crush the Cookies:

If you’re using whole cookies, place them in a food processor and pulse until they become fine crumbs. You can also crush them by hand using a rolling pin and a zip-top bag. Make sure you have fine crumbs for a smooth crust.

Combine with Butter and Sugar:

In a medium bowl, combine the cookie crumbs, melted butter, and sugar (if using). Mix well until all the crumbs are moistened. The mixture should resemble wet sand. This crust is a great base for many other desserts, such as our Red Velvet Cheesecake.

Press into Tart Pan:

Press the crumb mixture firmly and evenly into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Use the bottom of a measuring cup or your fingers to create an even layer.

Chill the Crust:

Place the crust in the refrigerator to chill for at least 30 minutes. This will help it firm up before you add the filling. Chilling helps the crust hold its shape.“

Preparing the Chocolate Filling

Now it’s time to make the delicious chocolate filling! Get ready for some creamy, chocolatey goodness. For a different kind of chocolatey indulgence, try our Cheesecake Brownies.

Beat Cream Cheese and Sugar:

In a large bowl, beat the softened cream cheese and powdered sugar together with an electric mixer until smooth and creamy. No lumps allowed!

Add Cocoa Powder and Vanilla:

Add the cocoa powder and vanilla extract to the cream cheese mixture. Beat again until everything is well combined. The mixture will be thick and chocolatey.

Whip Heavy Cream:

In a separate bowl, beat the cold heavy cream with an electric mixer until stiff peaks form. Be careful not to over-whip. You want the cream to hold its shape. This rich filling is similar to the one we use in our cupcakes with caramel icing.

Fold in Whipped Cream:

Gently fold the whipped cream into the chocolate mixture using a rubber spatula. Be careful not to deflate the whipped cream. Fold until just combined – you want a light and airy filling.

Assembling Your No-Bake Chocolate Raspberry Tart

Time to put it all together! This is the fun part where your tart starts to look like a masterpiece. If you’re looking for another impressive dessert, our Salted Caramel Basque Cheesecake is a guaranteed showstopper.

Spread the Filling:

Carefully remove the chilled crust from the refrigerator. Pour the chocolate filling into the crust and spread it evenly with a spatula or the back of a spoon. Make sure the surface is nice and smooth.

Arrange the Raspberries:

Arrange the fresh raspberries on top of the chocolate filling. Get creative with your design! You can arrange them in rows, circles, or any pattern you like. For a fun twist on a classic, try arranging the raspberries like we do on our Cake Roll.

Chill Before Serving:

Place the assembled tart back in the refrigerator to chill for at least 2-3 hours, or preferably overnight. This allows the filling to set completely and the flavors to meld together beautifully.
