Description

This creamy, dreamy pasta dish is so delicious, it‘s said to be proposal-worthy!


Ingredients

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
8 ounces penne pasta
1/2 cup sun-dried tomatoes packed in oil, drained
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
Dried oregano, to taste
Dried basil, to taste
Salt, to taste
Black pepper, to taste
Olive oil


Instructions

1. Season chicken with salt, pepper, oregano, and basil.
2. Sear chicken in olive oil over medium-high heat until golden brown and cooked through (165°F). Set aside.
3. Sauté garlic in the same skillet until fragrant.
4. Add heavy cream, sun-dried tomatoes, and half the Parmesan cheese to the skillet. Season with salt and pepper.
5. Simmer for 10-15 minutes, stirring gently, until sauce thickens.
6. Cook pasta according to package directions until al dente. Drain.
7. Return chicken to the sauce, coat evenly.
8. Add pasta to the skillet and toss gently to combine.
9. Serve immediately, garnished with fresh parsley or basil.


Notes

Feel free to use other pasta shapes. Don’t rinse the pasta after draining. Adjust seasonings to your liking. Serve with a side salad and crusty bread.
