Cheesy Fiesta Potatoes

A quick and easy homemade version of a fast-food favorite, loaded with flavor and perfect for any fiesta!


Ingredients

2 large russet potatoes, scrubbed and cut into bite-sized pieces
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
1 cup shredded cheddar cheese
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 cup sour cream
2 tablespoons chopped chives
1/4 cup pickled jalapeños, sliced


Instructions

1. Preheat oven to 400°F (200°C).
2. Toss potatoes with olive oil, salt, and pepper; spread on a baking sheet.
3. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy. Alternatively, air fry at 400°F for 15-20 minutes.
4. While potatoes cook, melt butter in a saucepan over medium heat.
5. Whisk in flour and cook for 1 minute.
6. Gradually whisk in milk until smooth; bring to a simmer.
7. Reduce heat to low and stir in cheese until melted and creamy. Season with salt and paprika.
8. Transfer cooked potatoes to a serving dish.
9. Pour cheese sauce over potatoes.
10. Top with sour cream, chives, and jalapeños.


Notes

Use Yukon Gold potatoes for creamier texture. Adjust spice level with cayenne pepper or hot sauce. Substitute cheese as desired. Parboiling potatoes helps achieve crispier results.
